Menu Monday

Well i didn't quite do my menu last week. We ate mostly at home (I say that tongue in cheek). We ended up being busy cleaning out the old house and moving even more stuff from there to our new home here. I swear this has been the longest move ever. We also had some showing for possible rent/buy but nothing came of it.

Today I am hoping to get some cleaning done and cook a good home cooked meal: chicken and vegetables.

Here is my tentative menu for the week. I'm beginning to think I won't be sticking to a menu till fall when the kids are in school and we actually have a set schedule!

Monday: roasted chicken and vegetables
Tuesday: taco tuesday
Wednesday: chili, cornbread
Thursday: eating out with my parents
Friday: sammies, chips, fruit
Saturday: cook out on grill with the fixin's
Sunday: Sunday dinner here at my house with all the family. Probably will make pasta, bread, salad and brownies.

Menu Monday is back!

Finally, maybe I will have somewhat of a normal week to plan a menu for. My gosh I am so ready for real home cooked meals again without worrying about stepping over boxes and eating out of a box hehe. Ok here goes...

Monday: beef stroganoff, green beans, corn bread
Tuesday: taco tuesday
Wednesday: chicken with roasted vegetables, rolls
Thursday: leftovers
Friday: sammies, chips, apple slices or grapes

I've been tagged!


You know its sad when I don't have anyone else to tag lol! but i'll participate. I must say I feel honored to receive my first tag from Michelle hehe. Ok here goes...

Here are the rules:

This is a picture of my girls room in the old house. How fitting this would be the 6th picture in my 6th folder esp. given my previous post. Oh how many memories I have of this room and my 2 girls sharing it. *Artist* and Paloma shared this space together. This space is what made *Artist* so thankful to finally get a room of her own. There was a time when this room belonged to my son and *artist* had a smaller room. Mariposa came along and she needed her own space. So we ended up moving Alejandro to the smaller room and put Mariposa in with *Artist* in this room. Obviously *Artist* was not happy about sharing. So I decided to hang a wire across the ceiling and hanging curtains from it so that when *artist* needed privacy she could draw the curtains closed. If you look real close you can see part of the curtain next to the white armoire. On one side of the curtain was blue which faced *artist's* side when closed and the other was pink which faced Mariposa's side when closed. That way when the curtains were closed they could at least feel like they had their own space. It worked for a time and *artist* was very patient sharing a room with her little sister who is 8 years her junior but I must say she is so very happy to be in a room of her own and a space of her own now. I must admit I will always have a place in my heart for this little room.

Light after darkness

This is a hard post for me to write. I just don't want to come across as spoiled or not appreciative of what I have. At the same time those that truly know me know that I need to be true to myself and to be transparent and honest so here goes...

The few weeks before our house was ready for move in were some of the darkest weeks I faced. The pure frustration of missing move in deadlines. The pure frustration of having to fire workers last minute and find new ones. The pure frustration of maxing out our home construction loan and having to finish out with cash. Honestly I checked out of the whole situation those last weeks. I just couldn't take it on. The stress of it all. So I did what I could to bear with the situation. I focused inward and on my home that I was living in at the time and truly fell back in love with it. As I walked through the hall in the evenings I would reminisce of the times I would hold a crying baby as I paced the hall at night while everyone slept. As I sat in my kitchen, I would reminisce of all the time spent peeling a gazillion layers of wallpaper out and faux finishing the walls with my husband. As I sat in my backyard I would reminisce of the b-ques we would have and the many pinatas broken apart. It was with such a heavy heart that I would be leaving this place I called home for 7 years. The place I brought 2 newborns home too. The place that saw me through finishing my education.

I was kidding myself to think that I would not have material attachment to "things". I was kidding myself thinking I shouldn't even be attached to them. Oh how I have learned. Its not necessarily the material things I became attached to but the memories they would bring to me when I saw, touched, and smelled these things. These things made it a home and boy did I learn just how much so when I moved into a completely empty space, a shell of a home. Those first few days when we moved into our new home were so lonely, isolating, empty. How could I fill over 2500 sq. feet with what I had in 1400sq. feet. How could I "nest" this empty space while my heart was breaking and yearning for my home. It didn't help that my 3yo would cry to go back home and when we would go to the old place she would cry wanting to stay there and sleep there and go home. I felt the same way but I had to put on my strong face and choke back the tears of losing what I had. I wanted so badly to just move back in. I mean the nails were still in the wall I just needed to put the pics back up. The cabinet liners were still in place. I could just put things back right? Wrong.

Father's Day my oldest *artist* wrote my husband the most touching card. She thanked him for building our home even though we don't have much money. She thanked him for all those hard hours he was working to make this possible. She thanked him for giving her her own room and space to call her own. It was then I knew there was no turning back and it was time for me to put on my big girl panties. I had to get down to business and nest this place up. I needed to make it home not only for me but for my family. So for the past 3 weeks sans internet I have done just that. Believe it or not I have not bought much new stuff. The vast majority came from our other house and I just did a lot of creative re purposing.

I can honestly say after 3 weeks of tears, fear, discouragement, I have come out of the darkness and now see the light. I have nested up my home (it still is a work in progress) and I can honestly say I love, love, love my home. I am so proud to call this house our home. I am so proud to live where I live. I am so happy and so blessed that my husband stuck it out for the past 2 years developing and building on our land. He didn't just build a house but he built our future. He made a foundation for our family. This is our home we plan to retire in and have our grandchildren come visit. I'm so happy that he had this vision for our family and that when the going got tough he didn't quit even though I wanted to many a times. (his stubborn nature really paid off this time lol). I feel so happy and so blessed to have what I have. I love watching Paloma ride her scooter through the great room (we have stained floors). I love hearing the kids run through the house with space to run and play. I loved watching the fireworks from my front porch and back yard. I am loving making all the new memories we are making and appreciating all these moments. I now feel the vision my husband had a few years ago. I now feel gratitude and appreciation in my heart for what he has been able to do and provide. I finally feel at home and loving it as are my kids.

I will forever be grateful and thankful for what I have but I must say there really should be a support group for those who build a home. Those that have been there done that all agree that it truly is one of the hardest things you go through to do and one of the most trying but if you can make it through to the end the rewards are great. You'll have a home that you built on your land that is all your own. What could be better than that. Well...maybe chocolate...maybe.

Ch..ch..ch..changes....

Hello! I realize I have been gone for quite some time. I realize I have not posted my Menu Mondays (trust me there was none to post. I have been on a first name basis with the take out girls). But...I have some news!!! We are finally moving..in the process that is and boy what a process it is when you are doing it yourself, by yourself, for yourself. Can you see the sweat pouring off of me now? I mean really who moves in the middle of June with 3 digit temps? who? yeah that would be me.

So I am busy busy busy trying to hold on to some semblance of reality while I work through all the garbage literal and non literal of my life and try to make it fit into a new home.

I have been contemplating a lot..(as usual). I have plans in my head where I want my blog to go. I have plans in my head where I want my life to go. So hang on with me and please be patient as I learn to be patient with myself. What a journey I am on and how exciting it will be when the dust settles just a bit.

I read a quote I really needed to read this morning which sparked this post on. Isn't it amazing how something you read or see or hear comes at just the right moment? Its like you have to be in the right place to really HEAR what you need to be hearing. So without further ado here it is and by the way I do not have a reference for the quote it was just something said on the Oprah show (and no I don't usually watch it too busy for that lol).

"Nothing good will come into your life unless you are grateful for what you have already."

It's time for me to allow grace and thankfulness into my life. It's time for me to let go of fear, worry, and all that holds me back from grace. It's about time for me.

God has a sense of humor

I woke up this morning checking my emails with the biggest chuckle. My realtor forwarded me the most hilarious joke. It explained how eating Hershey chocolate is bad for us because it gives us "small feet". When the picture popped up it had a photo of 4 very, very obese women that made their feet look small in comparison to their bodies. ha.

Now don't hate me for laughing...I too have some weight to lose but really this was funny.

Anyways the joke was completely timely as last night I was thinking about how unhealthy my eating has become (once again). It seems like there are "signs" all over the place pointing me in the direction to get myself back on track once again. Honestly I have gotten really bad. Sonic cokes daily. Brownies. Chocolate shakes. Fries. Lets just say I have been celebrating the summer with food and swallowing my stress away.

Yuck. Ick. Gross. So this morning bound and determined to lower my sugars and carbs, as I'm fixing my tomato/spinach omelet, I read that joke. What a way to keep me on track when I want to eat that piece of chocolate or drink that sonic coke.

Menu Monday

Is it really menu monday already? Geez, time goes by way too fast. I haven't even thought of what to eat this week but here goes anyways...

Monday: leftovers from Sunday dinner ie: brisket, ribs, cole slaw, beans, potato salad (getting hungry already).

Tuesday: taco tuesday

Wednesday: crock pot meat to make soft tacos and beans with.

Thursday: homemade pizzas, salad

Friday: sammies, chips, apple slices

Saturday: ?

Sunday: Sunday dinner at my sister's house
