Menu Monday

A new week a new menu. Hopefully we can actually eat this menu this week lol!

Monday: Maid Rites (ala Robyn) with either taters or chips
Tuesday: Taco Tuesday
Wednesday: Chicken Stir Fry, spring rolls
Thursday: Pizza
Friday: Tuna sammies, chips, apples (yes we eat this a lot during Lent)
Saturday: Grilled burgers, dogs, baked beans

Too many balls in the air...

Whew! I have way too much going on. First off lets just say last week's Menu Monday did NOT happen. We ate one thing on that menu and the rest was quickie sammies or eating out. It got so bad that *artist* actually asked me when I would be cooking again. She much prefers my cooking to eating out. How sweet I know.

So what kept me from cooking last week? My house. We are building a new one and are finally at the end stages. I'll be posting some pics later. We spent Spring Break last week shopping for granite, stained concrete, carpet, and other misc. stuff along with going to the Home Depot a bazillion times for a bazillion things the workers need. So all that and being that our land is far away from our current home equated to a lot of meals out. Not good. So back to home cooking this week thank heavens and hopefully I can nest at home a bit this week and get caught up on chores. My oh my my house needs it bad!

Then as if that is not enough I am mentoring an applicant for a leader position in my women's group. I am a leader and every new leader must be mentored to become accredited so that is going to have me busy.

I am involved in a book study that I have so been slacking on and I hate that. I stayed up late last night catching up on the reading in hopes that maybe I can participate. We are reading Created to be his Helpmeet which I love. i've read it once already and we are rereading and studying it again. It is amazing what you can get out of a book the second time around.

One glorious thing I did this weekend was watch Twilight! I am so in the Edward club! I had not seen it at the movies and was desperate to rent it. So much so that I showed up 10 minutes early at my video store to make sure I would get a copy. Well wouldn't you know it was only me and an old lady in the parking lot waiting for them to unlock the doors. I told myself surely the old lady is not going to rent Twilight but wouldn't you know she did! We both made a B-line to the Twilight section lol! it was way too funny but man I so enjoyed that 2 hours of pure blissful pleasure. What a delight.

Then I got to sneak away for an hour to barnes and nobles. I really needed that one though. I was a bit down as i just found out that a friend of mine has thyroid cancer. (is everyone doomed to the "C" word?) So to lift my own spirits I took some me time and it helped. I decided to make my friend a hospital care package that I will leave on her doorstep tomorrow. She is having surgery on wednesday. I think it hit me so hard as she is my age and has 4 kids as well. The whole thing just saddened me to pieces. But I am lifting her in prayer and will feel better when I give her her care package. i am buying a basket at dollar tree and filling it with a dr. pepper chapstick (she loves dr. p), flip flops to wear at the hospital, a pretty clip for her hair, a gossip rag, and a sonic gift card (she loves their fountain cokes like me). I'm sure she'll like it and hopefully that will lift her spirits.

So to sum up: I've been slacking in my home duties, have not been cooking as of late, have not participated in my book group, need to get on the ball with my mentorship, received sad news that hit me to my core and a dozen other things. I'm seeing this week as a new week to get caught up and reassess. I read somewhere and( i am paraphrasing here as I don't remember the direct quote) that real peace is not found in the quiet and stillness of life but rather is found in the hustle and bustle and noise of life when you can still be calm amidst the chaos. Now that is real peace. Now that is something I need to find.

This is what has me so busy...










This is our land before we began building. The second pic is the "after" shot of the house when our yellow stucco was put on. The third pic is the grey primer they put on before the final yellow stucco. Sorry its out of order but I was having too hard of a time flipping them so their you go. As you can see it is a modern spanish stucco home. My hubbie is an architect and as you may already have encountered most architects tend to have a modern asethetic to them. But rest assured the inside is very warm and inviting and spanish style. Can't wait to show ya'll the pics.


Yep this is what has been keeping me so darn busy lately! The outside is done now and we are now inside working hard. Lots of decisions and lots of workers running around. Its like ants out there. and yes my parents are living next door. We are so happy and thrilled. We are a close knit Italian family and we can't wait to be able to share a big backyard and lunches together on our porch. My parents are getting older: my mother is a new breast cancer survivor and my dad is a prostate cancer survivor and survived a near fatal heart attack a year ago. I learned real fast how precious our lives are and how we really do need to be near each other so my kids can experience their grandparents and vice versa. Nonno loves his grandkids so much as does Nonna.
So it looks like we should be moving in to my home within a month and a half and my parents should be in theirs this summer. Of course I'll be posting more pics then.

very colorful homes and he always wanted a pink
one so at 82 yo he finally got his pink home!

Monday: pork chops, green beans, rice. (my sister got a good deal on pork chops yesterday and brought me some. once again God provides! have you seen how expensive meat is lately?)

Tuesday: Taco Tuesday (homemade taco salads)

Wednesday: chicken taco casserole (recipe from Katie's blog)

Thursday: coca-cola roast (ala Robyn) served soft taco style, bean, rice

Friday: tuna sammies, chips, apple slices (Lent)

Saturday: clean out the fridge night...

Sunday: sunday dinner here at my house with the WHOLE fam.

What to eat...

What we're eating this week:

Monday: was Club Cracker Chicken Casserole. Oh honey was this good. I got the recipe from Katie's blog and man was this one a hit. My kids normally don't take seconds but this time they took thirds! Yummy.

Tuesday: Taco Tuesday. This is tradition in our home. We always have taco salads on tuesdays. It's easy and it takes out the guess work of what to eat for at least one day each week.

Wednesday: Pot Roast with rolls.

Thursday: Beef goulash. Got this recipe from Janice aka Elphaba. I hope its good!

Friday: being that it is Lent we can't eat meat so...we will be eating tuna sammies and chips. Plain and simple but it will do the trick.

I've decided I am going to blog every Monday my menu for the week. I'll be calling it "Menu Mondays" so look for that come Monday..

In other news, my sister sold her home and is now living in an apt. till her home is built next door to mine. She bought some of my land to build her home on so we will be neighbors. For some reason she felt like she couldn't take all her food to her apt. so she came with bags full for me! What a blessing indeed. I got at least $50 worth of goodies and stuff that I use: frozen veggies, broth, soups, etc. With our budget being so tight right now this is just what we needed. God provides!

I love you; I love you not...

my computer. Oh the ins and outs, the ups and downs, my desperate need for my computer. I love my computer. It is like my life line to the world. I can chat with my friends all over the world, I can read blogs like stories, and I get all my inspiration all from the safety of my home and in the comfort of my couch. Yep, that's where I am most times...on the couch with my laptop on my lap. Sometimes I wonder just how good this kind of technology is. Would it be bad of me to admit that sometimes i would prefer being at home typing away on my laptop than in the real world? It's just that I have a degree of control here. I decide when I log on. I decide how long I stay and visit. I decide who I talk to and when. I decide where I visit and get my inspiration and motivation from. You can't get that in real life.

In real life you have to talk to people you may have nothing in common with and pretend like you do. In real life the baby might need a nap and instead of giving a nap you stay to longer or miss nap altogether so you can hang out with someone in real time.

I don't know why it is but I swear I get more encourgement and support from the world wide web than I do in real life. I think people are like me: busy running around the kids to and fro, busy trying to keep their budgets going, busy preparing meals and cleaning, just plain busy with life. I mean as I type this out I have had the phone ring 3 times! Yes 3 times! talk about interruptions...that is what is so nice about the computer. Its on YOUR time. It could be 3am and I can come on here and find someone to talk with. i don't think my irl friend would appreciate a 3am call from me ha!

Which brings me to my point...I love the computer and what it does for me BUT hate the time it takes away...I mean i spend time turning it on and waiting for it to load...then get online...then wait to go to whatever site...then chat there...then log off....then turn off computer...and let's not even go into just how fast time goes when you are puttering away on the computer. I can say to myself i am going on for half an hour and before I know it it will be a full hour that I've been on doh!

I have a love/hate relationship with my computer. I love it; i love it not...For now this is my lifeline to the world during this time of being a sahm. I will try to use it for inspiration, to witness to others, to help others all the while trying to limit the time it sucks out of me...afterall, I do have a family to raise and a home to clean and for that I am so very blessed indeed.
